Had the rare opportunity to watch and learn how trout is prepared and smoked in a smokehouse with oak, and how cabbage and cucumbers are pickled by hand! It was so fascinating, and it’s amazing how everything is done in-house without any machinery. Poland is the only country with the original recipes for pickles and it’s awesome to see that such age-old traditions are upheld. The Polish used to get young ladies with long legs to step on the cabbage to make sure it’s mixed well with salt and, apparently, there are still people doing that to this day!
